Does anyone know of any good variants where piece sacrifice is more common
than in FIDE?

Wormhole Chess (by Fergus Duniho) is one game where material is often sacrificed to keep an attack going. Sample games can be found by searching for *Wormhole* on the Game Courier Game Logs, with filters set for 'Anytime' and 'Any Games'.
