You can edit the preset and create a new one (different colors, different
numbers of files/rows, different piece locations, another set of
pieces...). Then you must update the new preset and paste its new FORM
block on a web page on your own hard disk to issue an invitation.
I think you should use a slightly different name if you do not simply
change the colors, like Viking Chess on 108 squares as opposed to Viking
Chess. Otherwise your log will end up in the original directory.

Sure, you can change colors to make a new preset, but frequently I do not
create the game.  In any event, one player should be able to use alfaeire
pieces and another use abstract pieces in the same game, for example. 
Even more useful for games like Shogi (not everyone can or wants to read
the Kanji.)  Color overrides is somewhat less important, but still bloody
nice, especially with new games showing up with really wacky colors.

For the record, there is no need to speak in the subjunctive about the
ability to choose your own piece set for a game in Game Courier. It has
had that feature for some time. As for choosing the colors of the squares,
it could work, if implemented, only for boards automatically generated by
Game Courier, not for those made from images. This makes it a trickier
feature to implement.

Before you click the 'Verify' button, change the piece set that is listed
for you in the dropdown menu. Then, on the 'Verify your move' page, you
will see the board rendered with your selected piece set. It will continue
to use your selected piece set for your display of the game.
